The community is committed to promoting a lifestyle that prioritizes slow food practices, encourages the avoidance of frozen foods, and emphasizes the welfare of animals. This approach enables the curation of a menu and the hosting of workshops that are genuinely reflective of the local environment and its seasonal variations. By focusing on these principles, we aim to foster a deeper connection between people, food, and the land.
The cheese workshop is an important aspect of our programming and runs from February to July. Availability in January, August, and September is dependent on the milk production of our animals. Unfortunately, the cheese workshop will not be available from October to December. During these months, we have developed an alternative laboratory to keep our community engaged and learning. This flexibility underscores our dedication to providing valuable educational experiences throughout the year.
