   Here we’ll stop at a traditional Bolzano bar, where you can taste delicious canapés topped with speck and Bauernschinken. Speck is a dry-cured, smoked pork aged between six months and two years, infused with a blend of spices that give it its distinctive, savory flavor. It’s often served with traditional breads and pickled cucumbers, making it a true taste of the region. Bauernschinken is a cooked ham seasoned with the same spice blend as speck, offering a unique and flavorful cold cut that perfectly complements the local culinary tradition.

   Next, we’ll move to another local favorite where tradition meets flavor.    Bolzano is also renowned for its bread, especially Laugenbrot and Brezen. Laugenbrot is made by dipping bread rolls in a lye solution before baking and is sometimes filled with cheese. Brezen is a distinctive ring-shaped bread with a golden, shiny crust sprinkled with coarse salt, a true staple of the region.
